What matters to us more than our origins is what we are and how we do what we do. ” With these principles, the two young entrepreneurs Francesco Marra and Francesco Winspeare founded the Castel di Salve wine company in 1992, which comprises more than 40 hectares of family-owned vineyards. We don't want surnames or crests on the wine labels. Professionalism in wine production is very important to us. From the beginning it was clear that the wine was only produced from our own grapes. This includes autochthonous vines of high quality, which are still little known. Another basic idea: the “secret quality” of a wine, its “personality”, is its area of cultivation. "The most important thing for us is to maintain freshness and fruitiness," says Francesco Winspeare, "because all too often you can find oxidized wines in our area at an early stage." |
Region: | The fertile region of Puglia in the very south of Italy, practically on the heel, stretches 350km along the Adriatic coast. The Mediterranean climate and the widely suitable soils create ideal conditions for rich red wines, especially from the Negroamaro and Primitivo grape varieties. |

Manufacture : | Read by hand in September. The mash ferments in steel tanks for 3 weeks. The aging takes place in French oak barrels for 9 months. Then the wine rests in the steel tank for 8 months and another 7 months on the bottle before it goes on sale. |
